Pickled Fried Pork Spareribs

It was agonizing trying to decide which dish to feature; Sripraphai's menu is one amazingly delicious offering after another. This one in the picture, the fried pickled pork, was no exception: it comes with slabs of fresh, peeled ginger, peanuts, fried pickled pork pieces, fiery chiles, and tender leaves of lettuce to roll everything up in. The flavor of the pork is intense and savory; the dish is light but satisfying.
Other plates not to be missed: roasted duck salad, crispy watercress salad, stewed pork leg with egg and mustard greens. But really, it's hard to go wrong with Sripraphai's menu. In these parts, it's about as authentic as you can get without boarding a flight to Bangkok.
