Duck fat Frites

Intriguing indeed, if you have never tasted Duck fat before you will have to taste for yourself, regrettably I can't put into words the exact flavor profile. I love duck so I was quite anxious to taste these frites that were paired with fresh mayonnaise and house-made ketchup. I would have preferred the frites to be shaped more matchstick than thin twirled ringlets- it would have made them much more easier to eat. I enjoyed the dish very much, the mayonnaise was a perfect fit.
